Introduction

I changed this recipe so it would be healthier, but it isn't as tasty as the original in my opinion. The original calls for 2 cups of cheese, 3 cups of white rice, and a half pound of ground beef. Ingredients

    2 cups cooked brown rice
    1/2 pound ground turkey
    1 cup shredded cheddar jack cheese
    1-1/4 cups light sour cream
    1- 4 ounce can green chilies
    1/2 tsp. salt
    1/4 tsp salt
    chopped tomatoes
    sliced olives

Directions

1. In a large bowl, combine the rice, turkey, sour cream, half of cheese, chilies, salt, and pepper.
2. Spoon into a greased 1-1/2-qt baking dish. Sprinkle with remaining cheese. Bake uncovered at 350 degrees for 20-25 minutes or until heated through. Top with olives and tomatoes. Makes just over 4- 1 cup servings.
