Introduction

Ingredients

    1/4 c sliced almonds
    1 tbsp butter
    2 pkgs (10 oz each) frozen chopped broccoli
    1 can (10 oz) tuna, drained
    1 can (4 oz) mushrooms, drained
    1/2 c sliced water chestnuts
    1/2 c shredded cheddar cheese
    1 can Healthy Choice cream of mushroom soup
    1/2 c skim milk
    1/4 c lite mayonnaise or salad dressing
    2 tbsp chopped pimiento

Directions

1.Combine almonds & butter in small glass dish.
Microwave at med. power 3-4 minutes until toasted, stirring once. Careful not to overcook. Set aside.
2. Put broccoli in 12x8" glass baking dish & microwave to thaw; then drain. Sprinkle tuna, mushrooms, water chestnuts and cheese evenly over top. Combine soup, milk, mayo & pimiento. Pour over tuna mixture. Sprinkle toasted almonds over top.
3. Microwave, uncovered 8 minutes. Reduce to med. power for 6-8 minutes or until completely cooked.
You can cover with paper towel and cook on high for about 12 minutes if you prefer.

    this recipe seemed to have almost everything in my freezer and cabinets! It was just what I needed. I didn't add the almonds, but it was still very good! I think the mayo adds something. - 6/14/11
