Ingredients

*1 large egg
*93% 4oz. ground beef
*whole wheat english muffin
1/4 cup spinach
1-2 thin tomato slices
* dash each salt and pepper
Directions
Take the ground beef and roll it into a ball about the size of your fist. Spray the grill/griddle with cooking spray and put the temperature at med-high heat. Cook the beef for 5 minutes on one side and then flip it over. Keep flipping the beef over until the cooking thermometer reads about 160 degrees. It should take about 10-12 minutes on both sides for the beef to be fully cooked.
While the beef is still cooking, crack open one large egg and place it on a separate griddle. Let the egg cook for about 2 minutes until the edges of the egg white part is bubbling. Keep fliping it over on the opposite side until it looks done.
Toast the english muffin and put the beef patty on the bottom. Place the egg on of the beef and layer fresh spinach and tomato slices ontop. Put the remaining half of the english muffin ontop and enjoy!
