Ingredients

    1 canned chipolte pepper, chopped
    2 cloves garlic, minced
    1 cup chopped onions
    1 T oil
    1 summer squash, diced
    1 yellow or red pepper, diced
    1 zuchini, diced
    1 tomato, diced
    2T tomato paste
    2 cups hominy
    large can pinto beans, drained
    1 t oregano
    s & p


Directions

makes 4 servings
saute chipolte, onions, and garlic in oil
add veggies and cook until done
add hominy, beans, tomato paste, spices and enough water to make sauce. cook 30minutes and serve in whole wheat tortillas

    This was great! My hubby loves his mother's posole so I was happy to find this vegan recipe that I could make for the family. We all loved it. We added shredded cabbage and a squeeze of lime for the finishing touch! Yum, thanks for sharing! - 5/8/09
