This is an extremely low-fat, low-cal lunch. I like to eat it with whole-wheat crackers and reduced-fat cheese to make a delicious, healthy, balanced meal.

Ingredients

    4 Medium Ripe tomatoes
    12 oz Tuna packed in water
    4 tsp light Miracle Whip
    4 tsp brown mustard (I love Boetje's)
    4 tsp pickle relish
    1/4 cup celery, diced
    1/4 cup onion, diced
    1/4 cup bell pepper (I like red, but whatever color)

Directions

Cut the tops off the tomatoes and gut the insides.

Dice the celery, onions and peppers. Mix the diced vegetables with the tuna, Miracle Whip, mustard and relish.

Scoop the tuna mixture evenly into each hollowed tomato.

Serving size: 1 stuffed tomato

Also good if you add 4 oz cheese, diced very finely and mixed in. That adds (for low fat, Sargento colby jack cheese) 50 calories, 4 g fat, 140 mg sodium.

Great served with whole-wheat crackers topped with low-fat cheese or peanut butter.

    Excellent! More tasty than a tuna sandwich, and less boring. This will definitely become a lunch staple in my house. Even my picky "Why should I diet, I'm not fat" wife loved this! Keeper for sure. - 4/10/09
