Ingredients

    5 cups sliced mushrooms
    1 onion, chopped
    1/2 cup carrots, chopped
    1/4 cup dried tomato (not oil packed)
    3/4 cup chicken broth
    3 tbsp quick cooking tapioca
    1 tsp thyme, crushed
    1/2 tsp basil, crushed
    3 lbs chicken thighs or drumsticks (with bone) skin removed
    3 cups cooked wild and brown rice blend

Directions

1. In slow cooker combine mushrooms, onion carrot, and dried tomato. Pour chicken broth and wine over all. Sprinkle with tapioca, thyme basil, and garlic salt. Place chicken pieces on vegetables in cooker.
2. Cover and cook on low 7 to 8 hours. Serve over rice.
