Ingredients

    2 lbs boneless pork shoulder
    2 tbsp olive oil
    3/4 cup chicken broth
    3 tbsp quick cooking tapioca
    3 tbsp soy sauce
    1 tsp ginger
    1 (15 1/4oz) can pineapple chunks in juice
    4 carrots, cut into 1/2 slices
    1 large onion, cut into 1 inch pieces
    1 (8oz) can sliced water chestnuts, drained
    1 (6oz) package frozen peas

Directions

1. Trim fat from pork. Cut pork into 1 inch pieces. In a large skillet brown half of the pork at a time in hot oil. Drain off fat
2. In slow cooker combine broth, tapioca, soy sauce, and ginger. Drain pineapple, reserving juice. Stir juice into broth mixture; cover and chill pineapple chunks. Add carrots, onion, and water chestnuts to cooker. Add pork.
3. cover and cook on low for 6 to 8
4. Turn cooker on high. Stir pineapple chunks and the frozen peas into cooker. Cover and cook 10 to 15 minutes until peas are crisp tender. Serve over rice.
