Ingredients

    Streit's Matzo Ball Soup Mix (! package from box)
    1/4 cup butter
    1 cup chopped celery
    1/2 small onion minced
    three tablespoons parsely chopped very fine
    1/4 cup carrot matchsticks chopped
    2 tablespoons Osem Chicken style Conomme Instant Soup and Seasoning Mix
    2 quarts of water for broth
    salt and pepper to taste
    4 quarts water and coarse salt for boiling matzo balls

Directions

Mix the matzo dough according to directions, I couldn't find kosher for Passover oil so I had to use butter, but if you use oil you will probably save some calories, etc.
While you are waiting for the dough to set, put on a large pot of salted water to boil and chop the veggies and mix consumme to simmer in a medium sized sauce pan. For best results mix the consumme with a little hot water in a cup to smooth out the lumps before adding to sauce pan.
By the time you get the soup going your matzo dough should be ready, wet your hands and form the little balls. Plop, plop, plotz in the water, boil 30 minutes, by then your soup is savory...
put a matzo ball in a soup bowl, ladle soup over matzo ball.

I made this our meal with just a little matzah and cheese on the side and fed a family of 4 with this, myself and 3 kids, and we ate till we could burst-- and still have half a pot leftover!
