Introduction

I throw things together, and serve smaller portions. Typical serving = 3 stuffed shells. Ingredients

    Ferrara Pasta Shells
    1lb Ricotta cheese
    1/4 cup mozzarella cheese, grated
    1/4 c grated parmesan cheese
    1 egg, slightly beaten
    salt, pepper, and parsley to taste
    3 c spinach sauteed in
    1 T evoo
    2 cloves garlic

Directions

Saute spinach and garlic in evoo. Wilt, then drain. Combine spinach and cheeses in food processor, pulsing until blended and spinach is slightly cooled. Add egg.

Boil shells for 8 minutes, drain and place on paper lined pan.

Lightly cover baking dish with favorite sauce. Stuff shells and place in pan. Cover lightly with sauce. Sprinkle with additional cheese, if desired.

Bake 45 minutes in 350 degree oven.
