Introduction

Ingredients

3 large eggs (use 4 if its smaller)
500 ml water
2 tbs soya sauce
1 tbs chinese cooking wine or sherry
100 mushroom. If you have some, use 2 dried shitake mushrooms and use that water as part of the 500 ml water.
Minced pork
Salt to taste
Directions
1) In a big bowl, break the eggs and gently stir. Dont beat. You dont want bubbles
2) Add the water and mushroom water, soya sauce and salt and mix well.
3) In 3 bowls, arrange the sliced fresh and dried shitake mushrooms and pork mince at the bottom of the bowl
4) Pour egg mixture into bowls
5) Cover each bowl with cling film or tim foil and place in a very hot steamer.
6) Reduce the heat to minimum, and steam for 30 mins. Any longer and the custard with be bouncy instead of soft!
