    4 cups red lentils
    1 small onion
    1 large carrot
    3 cloves of garlic
    4 bay leaves
    4 tbsps curry powder
    8 cups of water
    1.5 cups of plain soy milk
    1 tbsp olive oil


chop vegetables and add to saute pan with 1 tbsp of olive oil cook on low heat until onions are translucent and add soy milk keep on low heat. Add lentils water and bay leaves to stock pot and bring to a boil and add vegetable and soy milk mixture. Let simmer and add curry powder, stir and simmer until flavors are infused.

    Simple recipe. Soup is pretty bland, I added some cinnamon and that seemed to help a little. However, it is very filling - 1/3/10
