Introduction

This is a lightened-up version of huevos rancheros that I often prepare for my family on weekends. Poaching the eggs is a great way to cut down on added fat and this method of poaching produces a soft, fluffy white and a nice runny yolk. Ingredients

    -4 large eggs
    -water
    -dash white vinegar

    -4 weight watchers (or similar) tortillas

    -1-1.5 cups salsa (I use medium low sodium, but you can use whatever you want, depending on your spice preference. If you don't like spice, use canned diced tomatoes)
    -4 Tbsp fresh cilantro, chopped (use parsley if you don't like cilantro)
    -1/2 cup black beans (canned or cooked)
    -4 Tbsp shredded low-fat cheese

Directions

-Brown the tortillas on both sides in a dry frying pan (this prevents them from getting soggy later). cover with paper towel and set aside

-Pour about 2 inches of water into a medium-sized pan, bring to a simmer.
-squirt in vinegar (keeps the whites from spreading out too much
-one at a time, crack the eggs into a bowl and gently ease into water (make sure you don't break the yolk)
-Let eggs cook 3-4 minutes (if you like a runny yolk, take them out as soon as the whites are set, 3 mins)
-While the eggs are cooking, mix the salsa with the beans and heat them in the microwave.
-Top each plate with a tortilla, an egg, 1/4 of the sauce, and 1 Tbsp each of the shredded cheese and chopped cilantro.
-Serve immediately and enjoy!
