Ingredients

Filling:
1 cup black beans
1 cup sweet corn
1/2 cup bell pepper
1/2 cup red onion
1 tbsp cilantro
Dressing:
1/2 cup fat free sour cream
1/2 avocado
1 tbsp lemon juice
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
4 flour tortillas (fat free)
1/4 cup shredded cheddar cheese (fat free)
4 large leaves of iceburg lettuce
Directions
Drain and rinse black beans, then put in a large bowl. Add corn. Chop pepper, onion, and cilantro, then add them as well.
In a food processer, combine avacado, lemon juice, sour cream, salt, pepper, and garlic powder. Blend until smooth.
Pour the dressing over the vegetables and beans, and toss to coat.
Place one leaf of lettuce on each tortilla. Fill with 1/4 of vegetable mixture. Sprinkle with cheese. Fold burrito. Use a bit of water on edges to help it stick together.
Spray pan with Pam or other non-stick no calorie cooking spray. Heat both sides of burrito about 30 seconds each to warm and brown the tortilla.
Serves four.
