Introduction

Chicken fajitas with lots of vegetables and a delicious flavor from the addition of spices, garlic, cilantro and lime. Pairs well with tortillas and pico de gallo. Ingredients

    # 1/2 Chicken Breast
    # 1 cup of Green Bell Peppers
    # 1 cup of Mushrooms
    # 1 cup of Onions
    # 2 cloves of Garlic
    # 1 tbsp of Olive Oil
    # 1 tbsp of Cilantro
    # 1 tsp of Black Pepper
    # 1 tsp of Chili Pepper
    # Dash of Cumin
    # Juice of 1 lime

Directions

Slice the bell peppers, mushrooms, and onions and set them aside. Put the olive oil in a skillet on the stove at medium high heat and add 2 cloves of chopped garlic. Place the chicken breast in the skillet and season with the pepper (black and chili) and cumin. Wait until the chicken is halfway cooked and add the bell peppers, mushrooms and onions. And the juice of one lime and lower the heat to cook thoroughly. Take off the stove and add 1 tbsp of fresh chopped cilantro so that it doesn't burn. Serve warm in flour or corn tortillas with pico de gallo, lettuce and low-fat cheese. This recipe easily makes 6 servings of 1/2 cup each.

    This recipe was very good. However, I made a rub with the dry spices and grilled my chicken, then sauteed the vegetables. Also added more spice since we like it that way! We will use this one again! - 5/5/10

  • I just made this. I used a whole chicken breast, and ate it like a burito with salad spinach. It's going on the favorites for sure! The cilantro (fresh) really made this dish! - 4/15/12
