Introduction
I originally got a basic version of this recipe from my Korean friend and added other things to it just to experiment. This recipe is super simple, very tasty, and doesn't take much time at all! Ingredients

1/5 block extra firm tofu, drained
1/2 packet mixed vegetables, frozen
2 cups cooked brown rice
1 clove garlic, minced
3 tbsp Soy Vay Veri Veri Teriyaki
1 tbsp extra light olive oil
Directions
1. In large skillet or wok, heat olive oil over medium-high heat. Throw in garlic and let saute for about two minutes.
2. Slice tofu into small, thin squares. Put in skillet as a single layer. Brown tofu on both sides, about two minutes each.
3. Meanwhile, heat up mixed vegetables in microwave, according to package directions.
4. After tofu is browned, add mixed vegetables. Stir together. Lower heat to medium. Cover for about five minutes, stirring occasionally.
5. Turn off heat. Remove cover. Add brown rice; stir together with vegetables and tofu. Pour teriyaki sauce over mixture and stir everything together.
6. Serve in a bowl or a pasta dish
