Introduction

Ingredients

1 x 10 oz package frozen Spinach, defrosted
1/2 cup Lentils
2 medium onions, chopped finely
2 large Tomatoes, diced finely
1 inch Ginger Root, chopped finely
1 tsp Cumin seeds
1/2 tsp Tumeric
2 tbsp Lemon Juice
1 tsp Garam Masala
2 Green Chillies, sliced
1 tbsp Olive Oil
Directions
Heat oil in a pan and season with cumin. When it splutters add onions and fry till golden brown. To this add ginger and chilli and fry for a minute.Then add the tomatoes and fry for 1-2 minutes.
Add lentils to the pan and cover with warm water Gently cook the mix adding water when required (note, it is useful to keep a kettle full of boiled water for this part). Allow to cook for about 15-20 minutes, until lentils are tender.
Add garam masala and turmeric powder then boil for few minutes. Add defrosted spinach and warm. Add lemon juice just before removing it from flame.
- Serve with 1/2 cup brown rice and 2 poppadoms for a healthy meal under 300 calories. Yum!!!
