Ingredients

    Wet Mix:
    1 Cup Sliced black olives
    1 Cup Cottage cheese
    1/4 Cup Parmesan cheese, Grated
    1 Cup Onion, Chopped
    1/4 Cup Vegetable oil
    3 Eggs
    1 tsp Sweet chilli sauce
    1 1/2 Cup Skim milk

    Dry Mix:
    3 Cup Self Raising Flour
    1 tsp Thyme (dried)

Directions

Makes 16 x 100g Muffins

Preheat Oven to 200 C and grease Muffin pans.

Combine and mix WET Ingredients in a bowl. When oven is at temperature, stir in DRY ingredients and mix quickly until ingredients are just combined.

Spoon 2-3 large tablespoons of mix into each muffin pan. Ideally the muffin pans should be filled almost to the top. Bake for 25-30min
Remove muffins from pans before cooling so that they don't sweat.

Once cool, store in the fridge or freezer for later.

Variations:
Try adding 1/4 Cup Sundried tomato into the wet mix.
Replace Thyme with Rosemary, Basil or Garlic
Replace Cottage cheese with fetta

    Very Good
    Zesty and lots of flavour. Using raw onions makes the centres of the muffins slightly too moist (almost gummmy). Next time I'd cook the onion first, turning this into a 5 star recipe. - 3/27/10
