Ingredients
-
* 1/4 c. low-fat milk (or soy or almond)
* 6 tbsp water
* 1/4 c. old fashioned oats
* pinch cinnamon
* pinch nutmeg
* 1/8 c. canned pumpkin, unsalted
* 1/8 c. sliced almonds (I think you could do milled almonds or flax seeds too)
* Stevia or Splenda to taste( I find one or two packets is plenty)
* 1/8 c. water
* 1/2 scoop vanilla protein powder (equal to 13g protein)
Directions
1. In a small pot, bring milk and water to a boil over medium heat. Add oats, cinnamon, and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed, about 7-10 minutes, stirring occasionally. (TRUTH, 15 min)
2. Once liquid is absorbed, stir in pumpkin, almonds and sweetener; then set aside.
3. Combine water and protein powder in a separate bowl. Mix with a fork (we use a whisk for a creamer outcome) until protein is dissolved.
4. Pour protein mixture over oatmeal and serve.
