Introduction

Number of Servings: 2

Ingredients

    mushrooms( I put a whole container)
    onion 1/2 a small or to taste
    yellow squash
    zucchini
    lite soy sauce to taste
    yellow or orange bell pepper sliced or diced
    garlic to taste (I use a tsp of roasted garlic)
    2 pita pockets

Directions

In a skillet sprayed with nonstick, no calorie cooking spray, saute' onion, garlic and mushrooms. when mushrooms release their moisture add peppers, zucchini, and squash. When all veggies are tender add soy and stir. Let simmer until veggies are to desired tenderness. Scoop into halvened, warmed pita pockets, serve.
