    3 cups day old cooked white rice
    2 cups cooked black beans
    1/4 cup finely chopped raw onion
    1/2 cup chopped fresh bell or sweet red peppers
    2 tbsp fresh cilantro, chopped
    3 tbsp canola oil
    2 tsp Worcestershire sauce
    Tabasco sauce, optional, to taste


Saute pepper and onion in oil on medium heat. Add beans and cook 2 minutes longer. Add rice and mix, cook 3 minutes more. Add Worcestershire sauce, cilantro and tabasco if desired. Mix well. Makes 4 servings, about 1 and 1/4 cup each. Garnish with favorite salsa.

Serving suggestions: great for breakfast with any style eggs, or as a side dish with meat and vegetables.

    this was surprisingly so good! I thought it may be bland, we all loved it! this will be in my weekly rotation for sure. I added more cilantro used brown rice, garlic powder, salt and pepper 1 tbs worcestershire. - 3/18/11
