Ingredients

    8 slices whole grain bread
    4 Tbsp natural peanut butter
    4 Tbsp Major Grey's mango chutney
    6 slices bacon, fried crisp, and drained on paper towels
    2 eggs
    1/2 cup lowfat milk
    S&P to taste















Directions

Heat heavy skillet or grillpan over medium heat. Assemble sandwich: spread one slice of bread with 1 tablespoon of peanut butter, spread another with 1 tablespoon of mango chutney. Place 1 1/2 strips of bacon over peanut butter and close sandwich. Repeat with remaining ingredients. Beat eggs lightly in a shallow dish, add milk, and mix well.

Spray pan with cooking spray. Dip sandwiches into egg mixture and place on pan. Cook until golden brown, flip, and cook the other side.

Delicious with fresh fruit.
