Ingredients

    1 pound lean ground turkey
    1/2 cup chopped onion
    2 tbsp chili powder
    1 tsp ground cumin
    1/2 tsp sea salt
    3 cups cooked brown or wild rice
    1 can of drained pinto (or you can use kidney) beans
    1/2 cup chopped red pepper
    1/2 cup chopped green pepper
    1/2 cup low sodium (or no salt added) diced tomatoes
    fresh cilantro for garnish (optional)

Directions

In a large skillet, brown ground turkey. Add onions and peppers, cook just until tender. Add spices; stir in beans and tomatoes; heat through.
Garnish with cilantro

    This is really wonderful, even with me leaving the turkey out. I did the brown rice option for a quick (late!) dinner and it was even better as lunch today. The cumin/cilantro combo is great! - 4/21/09

    Really good! Did add 1/4 c. of chicken broth to keep it going as the turkey I use (93.7) is pretty dry. Could also add can of diced tomatoes. I could see traditional eaters like thing recipe and I know I did! Will become a favorite! - 11/13/09
