Number of Servings: 24

Ingredients

    2 large eggs
    1/4 cup Vegetable Oil
    1/4 cup unsweetened applesauce
    1 cup Milk
    1/2 cup honey
    2 cups flour
    1/2 cup Brown Sugar, packed
    6 tsp baking powder
    2 tsp Salt
    4 tbsp ground flaxseed
    1 cup raisins (optional)
    2 cups cereal - whatever you have on hand (for this recipe I used raisin bran

Directions

Preheat oven to 350. Grease 2 muffin tins. Mix dry ingredients together in a large bowl. Beat eggs and whisk together with wet ingredients in smaller bowl. Add wet ingredients to dry ingredients and mix until just moistenend. Batter should be lumpy. Fill muffin cups 2/3 full and bake for 20-25 minutes, or until golden brown and toothpick comes out clean. Makes 24 muffins.

    I will definitely be trying these with different cereals we have going stale. I made them with kix and I'm not sure I would use it again as the only cereal in the muffin. I got 12 full size muffins and 24 mini muffins out of the recipe. - 3/11/13
