You can fill this quiche with just about anything you like and since it bakes it's own crust you can even make it in muffin tins for parties. Ingredients

1Tbsspn butter
1 cup chopped blanched broccoli
1 ½ cups shredded swiss cheese
¼ cup chopped onion
¼ cup sliced mushrooms
3 slices of lean ham shredded
2 cups milk
2 eggs
2 egg whites
½ cup flour
1 tsp baking powder
½ tsp salt pinch of ground pepper and nutmeg
Directions
Grease a 1L 9 inch pie plate or Quiche dish with butter. Combine Broccoli, mushrooms, cheese, onion and ham and spread in prepared pie plate.
Place milk, eggs, egg whites, flour baking powder, salt, pepper and nutmeg in blender or food processor. Blend or wish at high speed until well combined. Pour over vegetable mixture. Bake at 325°F for 45 min or until a knife inserted in the centre comes out clean. Let cool for 5 min before serving.
