Number of Servings: 6

Ingredients

    3 tbsp olive oil
    1 onion, chopped
    4 garlic cloves, crushed
    1 green bell pepper, seeded and chopped
    3/4 tsp chili powder
    1 lb 5 oz tomatoes, chopped
    8 oz French bread, cubed
    4 cups vegetable stock

Directions

1. Heat the oil in a large skillet. Add onion, garlic, and bell pepper and sautee over a low heat, stirring frequently, for 2-3 minutes, or until onions are translucent.
2. Add the chili powder and tomatoes and cook over a medium heat until the mixture has thickened.
3. Stir in the bread cubes and stock and cook for 10-15 minutes, until the soup is thick and fairly smooth.
4. Serve with garlic bread if desired.

Makes 6 hearty servings.
