Great low-carb option and delicious too. I like this in a low-carb pita that's been toasted...add those calories separately! You can eat this without a wrap/pita for an even lower carb option. Ingredients

    1 Tbsp Extra Virgin Olive Oil
    8 oz turkey breast lunch meat (I use Hillshire Farms Deli Select Mesquite Smoked Turkey)
    1 large green pepper, sliced
    1 large onion, sliced
    2 cups sliced mushrooms
    4 Laughing Cow Light Creamy Swiss Original Cheese (or your favorite flavor)

Directions

Slice onion into rings. Slice green peppers into strips. Slice mushrooms or buy the pre-sliced mushrooms. Roll up turkey and slice into strips.

Heat large skillet on medium heat. Add olive oil. Add onion, green pepper and mushrooms to the skillet once olive oil is heated. When onions are translucent, add the turkey and cheese wedges. Cook until turkey is heated through and cheese has melted...stirring until everything is coated in the melted cheese.

Divide into four equal servings.
