Introduction
When we went on vacation with friends, our friend Andrew made us these pan cakes that his mom used to make him when he was growing up at Cresent Beach, BC. They are quick, easy and de-lish! Not to mention a good source of protein too! Ingredients

2 cups flour
8 eggs
2 cups 1% milk
Directions
Whisk the eggs together in a large bowl. Once thoroughly mixed stir in the flour and the milk.
Stir until well blended.
Spray two glass pie plates with Pam cooking spray. Evenly distribute the batter into the two pie plates.
Bake at 350 F for 15 minutes.
The pan cakes will rise around the edges - this is normal.
Remove from the oven, sprinkle (sift) with icing (powdered) sugar if desired.
My kids enjoy this with maple syrup. Personally I prefer it with lemon juice and a little icing sugar.
