An Italian chicken pasta salad loaded with veggies and topped with a zesty salad dressing and parmesan cheese. Perfect for a fast but healthy lunch or dinner. Also, a good tip is to prepare 2 oz of pasta for one serving and serve the chicken and veggies over a bed of romaine lettuce for another healthy alternative. Ingredients

    * 1/2 chicken breast
    * 1/2 cup of chopped onions
    * 1 cup of chopped tomatoes
    * 1 cup of chopped cucumber
    * 1 clove of garlic
    * 1 tbsp of olive oil
    * 1 tsp of black pepper
    * 6 oz of pasta (preferably the spiral type)
    * 3 tbsp of Kraft Zesty Italian Salad dressing, or equivalent
    * 3 tbsp of parmesan cheese

Directions

Heat a pot of water over the stove. Add the pasta to the pot of boiling water. Chop the garlic, tomatoes, cucumbers and onions. Place 1 tbsp of olive oil in a skillet and add the garlic. Once the skillet heats add the chicken breast seasoned with 1 tsp of black pepper. When the chicken is halfway cooked add the onions to the skillet and finish cooking. Drain the pasta and add it to a bowl with the tomatoes and cucumbers. Cut the chicken into bite size pieces and add to the bowl. Mix it all together with the salad dressing and top with grated parmesan cheese. This recipe makes 3 servings.
