Introduction

A firm thick crispy omelet. This is great for winter when you need to get some veggies into your diet. I make the two servings because I don't want to save half a can of green beans. Ingredients

    Pam no-stick cooking spray, 3 second spray.
    One 14 1/2 oz. can cut green beans, drained.
    3 large fresh eggs.
    Pepper, black
    Onion Powder
    2 oz. grated Co-Jack Cheese

Directions

Makes 2 servings approximately 1 1/2 cups each.

Whip eggs a little with fork and a tbs. water in bowl.

Grate cheese with micro-plane onto a plate.

Liberally spray a heavy frying pan with Pam.
Heat pan over med-high heat.

Add drained green beans, onion powder, and black pepper.
Saute until starting to brown.

Add eggs. Cook eggs until almost done.

Add grated cheese. When cheese starts to melt, flip with spatula that has been sprayed with Pam.

When both sides are crispy and golden, slide onto a plate and cut in two.
