Introduction

A variation of a yummy dish my mother in law makes. This tastes wonderful with ground beef but ground turkey is much leaner. Use homemade or low sodium tomato sauce if sodium is a concern. Ingredients

    1 lb. 93% lean ground turkey
    1 small yellow onion, chopped
    1/2 cup chopped green pepper (or more to your taste)
    1 can diced tomatoes ("no salt added" used to calculate nutrition info)
    1 Jar (26 oz.) marinara sauce
    1/2 tsp salt
    1/2 tsp fresh ground black pepper
    12 oz pasta (shells,elbows, farfalle, ziti...your choice)
    2 quarts water (to cook the pasta in)
    4 oz. part skim milk mozzarella cheese, shredded
    red pepper flakes (optional; to taste)
    several teaspoons of canned, diced chile peppers (optional; to taste)

Directions

1. Preheat oven to 350 degrees. Prepare an oven safe dish (5 qt. or 13 X 9 inch) by spraying with cooking spray.

2. Cook ground turkey, chopped onion and green pepper over medium/ medium-high heat until the turkey is done (no pink).

3. In a separate pot, boil water and cook pasta until al dente (will depend on variety of pasta). Drain. Note: this is a great use of left-over pasta

4. Combine cooked meat, cooked pasta, and all remaining ingredients EXCEPT the mozzarella cheese. Place in oven-safe dish. Cover and bake for 25 minutes.

5. Remove from oven and sprinkle with shredded mozzarella cheese. Return to the oven and bake, uncovered, for 10 more minutes or until the cheese has melted.

Number of servings = 8 to 10 servings, approximately 1 1/2 Cups each
