Ingredients

    1 can diced tomatoes (19 oz) undrained
    1 pkg chicken stove top stuffing
    2 cloves garlic, minced
    12 oz cooked boneless, skinless chicken breast , cubed
    1 tsp dried basil
    1 cup shredded mozzarella cheese

Directions

Preheat oven to 400 degrees. Spray 9"X13" pan with non stick cooking spray.
Place tomatoes in medium bowl, add stuffing mix and garlic. Stir until moistened, set aside. Place chicken in prepared pan. Sprinkle with cheese and basil. Top with stuffing mixture. Cover with foil and bake for 20 min. Remove foil and continue baking for 10 min. Makes 6 servings of 1 cup each! Enjoy

    Very Good
    I made this last night, my husband loved it. I used chili tomatoes with onions, and i baked my chicken breast mostly done then drained and left them whole and added the topping. Had a chicken breast with the goodies on top(which saved from eating too much of the stuffing) with a tossed salad! Thanks - 1/25/12
