Introduction

Sort of home made fish cakes, but with rice instead of potato. Can also be shaped into healthy home made fish fingers.
Use any white fish which is reasonably priced

Number of Servings: 8

Ingredients

    1 cup long grain white rice
    750 white fish
    1/2 cup white onion chopped finely
    1 Tsp dried parsley or twice that amount fresh
    Salt & Pepper to taste
    Breadcrumbs to coat

Directions

1. First cook the rice, drain & cool
2. Cut fish into small pieces and cook in microwave for 1 - 2 mins (until just cooked through) Drain but save a little of the liquid in a cup.
3. break up fish with a fork and add the rice.
4. add chopped onion, parsley, salt & pepper
Check how it rolls together and add some of the fish liquid if needed . Its better to be a little moist as it stays together better to cook.
Coat in breadcrumbs and arrange on a baking sheet
Spray with a canola or olive oil spray.
Bake in oven under grill - 5 minutes each side
Makes approx 16 reasonable sized patties , with a serve of 2 patties per person.

Great for in home-made fish burgers !

    I thought it was very easy to prepare,and very good.
    Again,like all recipes that cross my path I had to tweek it a bit. I used brown rice, added a 1/4 cup of Tofu to mash with the fish, a splash of light Soy sauce, & a 1/4 cup of fresh flat leaf parsley. Make it both ways see what works for you.
