Milk, nonfat, 1 cup
Applesauce, unsweetened, .5 cup
egg white, fresh, 1 large
Banana, fresh, 1 small (6" to 6-7/8" long)
*Splenda Brown Sugar Blend, 16 tsp
Vanilla Extract, 1 tsp
*Whole Wheat Flour, 1 cup
Baking Powder, 1 tsp
Raisins, .25 cup (not packed)

Preheat oven to 375 degrees. Spray muffin cups with nonstick spray or use silicone cups with no spray. Mix together wheat bran and milk and let stand for 10 minutes. In a large bowl, mix together applesauce, egg, brown sugar splenda and vanilla. Mash bananas and add to mixture. Stir in bran mixture. Mix whole wheat flour, baking soda and baking powder. Stir into bran mixture until just blended. Fold in raisins. Scoop into muffin cups and bake in preheated oven for 20 minutes. Muffins are done when tops spring back when lightly tapped.
