Quick meal with ingredients on hand. Quick meal with ingredients on hand.

    17 ounces chicken
    1 1/2 cups black beans
    1/4 cup salsa
    1 Tbsp Olive oil
    3 Italian tomatoes


Cook chicken in oil and add other ingredients. Simmer for 10 minutes. Enjoy. Makes 5 servings. Serve with veggies and/or fruit.

  • I am going to try this weekend. Did you use skinless, boneless chicken breasts? Also, did you fry it in the oil or bake it? With flour or without? Sorry, cooking is new for me. LOL. Thanks.

    Yes, I used two large skinless, boneless chicken breasts which came to 17 ounces. I cut them in bite-size pieces and fried them in the oil without flour. As long as it is browned on all sides it should be OK because you simmer it longer in the juices when you add the beans (basically a can). :-)

    this was awsome!!just found this recipe at the last minute.super easy and i added a can of corn and served it over brown rice my husband loved it as did my 7 yr. old grandson both want me to make it again!! Thanks - 4/30/09
