Number of Servings: 4

Ingredients

    1/2 cup plain low-fat yogurt
    1 green onion, chopped finely
    1 tsp dried oregano leaves, crushed
    1 Tbsp Olive Oil
    1 Tbsp white vinegar
    1 tsp salt (or less)
    1/8 tsp pepper
    4 skinless, boneless chicken breast halves
    Oregano or parsley sprigs for garnish

Directions

Makes 4 servings.

1. In a large bowl, mix yogurt, green onion, dried oregano leaves, olive oil, vinegar, salt, and pepper. Add chicken breast halves and toss to mix well. Let stand for 15 minutes. Preheat broiler.

2. Place chicken breasts on rack in broiling pan. Place pan in broiler at closest position to source of heat. Broil for about 5 minutes. Turn breasts, brush with any remaining yogurt mixture, and broil 5-6 minutes longer until fort-tender and lightly browned.

    Used boneless, skinless thighs because it's what we had, and put a little garlic powder in the marinade, but what an easy and delicious meal! Would also probably be fantastic grilled. - 2/9/13

    This is my favourite way to cook chicken - very moist! I have been making it for years but can't remember where I got the recipe. Use the BBQ in the summer. - 1/15/11
