Ingredients

    3/4 c brown rice
    1/4 cup chopped onion
    1/2 T olive oil
    1/4 t salt
    1 1/4 c low sodium, fat free chicken broth
    1/4 c paremsan cheese, grated
    1 T dried parsley
    1 T dried basil
    1/2 T lemon juice
    1/4 t black pepper

Directions

Preheat oven to 375. Spread rice in an 8x8 baking dish. Combine onion, oil and salt in medium saucepan. Cover and cook over medium-low heat, stirring coocasionally until the onion is softened, about 8-10 minutes (don't let them burn!) Stir in the broth and bring to a boil. Once it is boiling, immediately pour it over the rice. Cover the dish tightly with a double layer of foil. Bake until rice is tender, about 35 minutes. Remove, uncover and fluff with a fork. Stir in paremsan, parsley, basil, lemon juice and pepper. Cover the dish with a clean kitchen towel and let stand for 5 minutes before serving.

    Very Good
    Used Basmati Brown Rice. Ended up baking almost 20 minutes more than called for. Definitely cut down on the salt and I believe the 1T Basil was a typo, as I used 1 t. and it seems just right. - 12/28/11
