Introduction

Just things I had on hand and threw together and it ended up being a very good and filling meal. Just things I had on hand and threw together and it ended up being a very good and filling meal.

Ingredients

    1 pound extra lean ground beef
    1 large can black (or ranch style) beans
    1 regular can stewed tomatoes (or a cup of mild chunky picante sauce)
    3 cloves garlic chopped
    1 medium onion chopped
    2 or 3 cups brown rice
    1/2 cup corn
    1/2 cup peas
    1/2 cup shredded Monterrey jack cheese

    I didn't have them on hand but I would also add a small can of green chili's and a chopped green pepper instead of the peas.

Directions

Brown ground beef with chopped onion and garlic, after browned add one can stewed tomatoes with juice, the taco seasoning (approx. 1pkt), the beans, the cooked rice, and the cooked corn and peas. I pre-cook the rice and veggies , it just makes it faster. Cook until heated through, sprinkle cheese on top and let melt or transfer to a glass or oven safe dish and melt under broiler.
