Introduction

I made vegetable broth by freezing all my veggie peelings for a month, wrapped in foil, and then heating them up in water for a few hours and straining out the vegetable bits. Then I added leftovers from a chicken / brown rice dinner, and voila! Ingredients

    6 cups vegetable stock
    1 baked chicken breast, diced
    1.5 cups of brown rice
    1 cup frozen green beans
    1/2 cup frozen shelled edamame
    1/2 chopped yellow onion
    1 diced raw potato
    1 tbsp rosemary
    1 tbsp oregano
    Salt and Pepper to taste

Directions

Once you've created your stock, simply put in your chopped chicken, rice, and veggies, then your seasonings, and simmer for at least two hours for the flavors to blend.
