Ingredients

1 Chicken breast, boneless and skinless
3 Chicken thighs, boneless and skinless
2 T. olive oil
2 tsp. minced garlic
1/4 onion, chopped
1/4 green pepper, chopped
1-10 oz. pkg. frozen spinach
1-6 oz jar marinated and quartered Artichoke hearts
Salt and Pepper to taste
1/4 tsp. garlic powder
1/8 tsp. nutmeg
2 oz. crumbled feta cheese
Directions
Saute minced garlic, onion and green pepper in olive oil for 2 minutes. Add chicken and brown 5 minutes on each side. Salt and pepper lightly.
Add the spinach and artichoke hearts, nutmeg and garlic powder. Salt and pepper lightly. Cover and simmer for 15 minutes or until chicken is cooked through. Top with feta cheese and cover and simmer another 2-3 minutes.
