Ingredients

    2 Cups Dried Split Peas (about 1 lbs)
    2 quarts water
    1 ham bone ( about 1 cup diced ham)
    1 cup minced celery
    1 med onion - finely chopped (about 1/2 cup)
    1 sprig parsley
    1/4 tsp pepper

Directions

Heat peas and water to boiling, boil gently 2 minutes, Remove from heat, cover and let stand 1 hour
add remaining ingredients. Heat to boiling. reduce heat simmer 2.5 - 3 hours or until peas are very soft.
remove bone, and trim meat from boan, add to soup. If desired thin with milk or water.
