Introduction

I make it about the same as cookbook but add twice the walnuts. I live at high altitude so I have added one half teaspoon baking soda and usually add up to 1/4 c flour if it seems too wet. Ingredients

    Mash very ripe bananas to equal 1 cup.
    Whisk in 2 eggs. Add 3/4 c sugar, 1 t salt and 1.5 t baking soda. Add 2 cups flour, one at a time & stir. Add 2T melted butter and chopped walnuts. Place in greased(cooking spray) loaf pan(s). Dot with a few broken walnuts if desired.
    Benefiber can be added if desired, up to 1/4 cup.

Directions

Bake at 350 Makes one large loaf or 2 or 3 depending on size pan. Adjust cooking time for smaller loaves. Place smaller foil pans on a cookie sheet. Use cake tester when comes out clean. Turn out of pans after 10 min to cool on rack. Tastes best the next day, so make nite b/4 if you want for breakfast.
