Introduction

Delicious, healthy tomato sauce or you can make it into the best Tomato Basil Soup ever! Delicious, healthy tomato sauce or you can make it into the best Tomato Basil Soup ever!
Number of Servings: 6

Ingredients

    4lbs red, ripe tomatoes, quartered
    1 onion, coarsely chopped
    4 cloves garlic, whole
    2t salt
    1t sugar
    1/2t crushed red pepper flakes
    1/4 - 1/2c olive oil
    1/2c chopped, fresh basil


Directions

Preheat oven to 450. Combine all ingredients, except basil, in 9x12 pyrex, toss to coat. Bake for 50 minutes, turning often. Remove from oven and allow to cool. Add basil. You can serve this chunky over whole wheat pasta or put in blender until smooth for a sauce. This is wonderful served over meatloaf. Add a bit of chicken broth or non-fat milk for a wonderful Tomato Basil Soup, top with fresh pesto and parmesan cheese. This freezes beautifully!!
