Introduction
This salad is a combination of beans and vegetables and tastes great served alonside brown rice for a meal. This salad is a combination of beans and vegetables and tastes great served alonside brown rice for a meal.Number of Servings: 4
Ingredients

16 ounce can of chick peas
15 ounce can of diced tomatoes
1 cup or one medium diced red onion
1 cup diced sweet peppers (red, yellow and orange)
four stalks of diced celery (one cup)
3 tsp of sugar (optional)
1/2 tsp of coarsly ground black pepper
1/4 tsp red pepper ( or more if you like things hot)
2 tsp of Italian spice (if not available, use 1 tsp oregano and 1 tsp of basil)
Directions
Take a 16 0z can of chick peas (or two cups soaked dried ones) and mix with a 15 oounce can of diced tomatoes. Add the sugar, chopped celery, chopped sweet peppers and the chopped red onion and mix well.
To this, add two teaspoons of italian spice, 1/2 tsp of coarsly ground black pepper and a 1/4 tsp red pepper (or more if you like it hot)
Toss salad and serve. For best results, chill overnight in the fridge so the flavors can blend.
Makes four one cup servings.
