Introduction

One of those throw-together meals turned out tasty enough that I thought I would share it. I served it over whole wheat pasta and topped it with a little shredded cheese for garnish. Number of Servings: 4

Ingredients

    1 can of great northern beans, drained & rinsed
    1 can of diced tomatoes, drained & rinsed
    1 tsp olive oil
    1 cup fresh chopped onion
    10 oz chopped spinach (fresh or thawed)
    1 cup cooked broccoli, chopped
    3 cloves garlic (chopped)
    Salt & pepper to taste

Directions

1. Heat olive oil in non-stick frying pan over medium heat
2. Add garlic and onion & sautee until onion is tender
3. Add all remaining ingredients, cover, and let cook (stirring occasionally) until all ingredients are thoroughly heated. There should be enough juice from ingredients to keep it from sticking.
4. Salt & pepper to taste

    Very Good
    Ingredients go well together...I added seasonings (no salt seasoning, oregano, garlic pwdr, cilantro and a tad bit of lemon juice. Serving w/ leftover chicken & a cup of pasta.
    I would make this again.
