Introduction

A lower sodium replacement for canned soup. This is still fairly high in sodium but not nearly as bad as the canned.

The vegetables and/or cheese not included in calculations.

Makes approximately 2 cups mix. Nutrition calculated per 2/3 cup.

Ingredients

    1 1/2 cup nonfat dry milk powder
    3/4 cup flour
    1 teaspoon salt sense
    1/2 cup Soft Margarine

Directions

In a bowl, stir together the first three ingredients. Cut in the margarine until mixture resembles small peas (or use a food processor). Store in refrigerator.

To make soup:

1) thin soup: 1/3 cup mix and 1 cup water
2) medium : 1/2 cup mix and 1 cup water
3) thick : 2/3 cup mix and 1 cup water

Combine in a saucepan and stir with a whisk until thickened. Makes about 10 ounces, the same as a can of cream soup.

Mushroom Sauce: Saute 1/2 cups diced mushrooms in a little oil before cooking. Add mix and water to saucepan and cook as above.

Celery Sauce: Same as mushroom substituting chopped celery for the mushrooms.

Cheese Sauce: Add 1/2 cup cheese after cooking the sauce. Stir to melt.
