Ingredients

    12 oz. Healthy Harvest whole grain wide noodles
    1.5 c. reduced-fat sour cream
    2 t. lemon juice
    2 T. butter
    1/4 c. all-purpose flour
    2 c. milk (1% or skim)
    1/3 c. + 2 T. parmesan cheese
    1 pkg. (10 oz) frozen chopped spinach, thawed & drained
    1 pkg (5 oz) Stove Top stuffing mix chicken flavor
    2 cans (5 oz) water-packed tuna, drained

Directions

Cook noodles according to package directions. Meanwhile, combine sour cream and lemon juice; set aside.

In large saucepan, melt butter. Stir in flour until blended. Gradually stir in milk. Bring to a boil; cook and stir 2 min. or until thickened. Reduce heat; stir in 1/3 c. parmesan cheese. Remove from heat; stir in sour cream mixture. Add spinach, stuffing mix, bread crumbs, and tuna; mix well.

Drain noodles and place in a 13 x 9 baking dish coated with cooking spray. Top wtih tuna mixture; sprinkle with remaining Parmesan cheese.

Cover and bake at 350 for 30 min. Uncover; bake 5 min. longer or until lightly browned.

    Good - I really enjoyed. Threw in some left over vegetables I had from another recipe. Reheated REALLY well, which is always a bonus. Just found it a little lacking in spices or flavor. I used hot sauce which helped. - 6/14/09

    I will be trying this one tonight. No mention of bread crumbs in the ingredients. I assume that the bread crumbs and stuffing mix mentioned in the list of ingredients would be the same thing? - 11/26/09

    Very Good
    I used olive oil instead of butter - worked well. I added minced garlic, white pepper, and dried thyme which gave it some spice. I'll try it will added veggies next time. - 7/4/09
