Ingredients

½ cup cooked brown rice
1 tbsp. sesame oil
1 tbsp. low sodium soy sauce
1 clove garlic, minced
1 tbsp. grated ginger
1/2 cup chopped carrot
8 shrimp, peeled
2 cups chopped bok choy (or other stir fry vegetables)
1/2 cup chopped green onion and peas
Directions
Saute first 6 ingredients for 3 min. Add shrimp, bok choy, green onion and peas and cook for 5 min. more or until shrimp turn pink.
