Ingredients

    1 Grilled chicken breast ground in food processor
    2 Jumbo Eggs
    2 Tbsp. Plain Bread Crumbs
    2 Tbsp. Grated Pecorino Romano Cheese
    1/2 Cup Chopped Red Peppers
    1 Tbsp. Onion Powder
    2 Tsp. Garlic Powder
    4 Medium Red Peppers-Tops removed
    2 Tsp. chopped garlic
    1 Tbsp. Extra Virgin Olive Oil
    1Tbsp. Onion Powder
    3 Cups Diced Tomatoes

Directions

Grind cooked grilled chicken in food processor. Place in bowl with 1 Tbsp. onion powder, garlic powder, chopped red peppers, eggs, bread crumbs; mix together well. Stuff four medium red peppers. Place olive oil and garlic in large pan. Saute for 1 minute. Place stuffed peppers into oil and garlic mixture. Brown all sides on low heat. Add diced tomatoes, 1 tbsp onion powder, salt & pepper (if desired). Cook over low heat for 20 minutes, or until peppers and tomatoes are soft. Makes 4 servings.
