Ingredients

    1/2 salmon fillet 1 1/2 tbl fat free mayo 1 tbl lemon juice 2 c red or leaf lettuce 2 c iceberg lettuce for added crunch 1 med roma tomato 8 lg black olives 1/4 c shredded mozzarella cheese 1 green onion top chopped (garnish)
    This is great for leftover salmon !!
    combine the salmon mayo and lemon juice in a bowl set aside. chop lettuce,tomatoes,olive mix together sprinkle with cheese. top with salon mix and garnish with green onion.

Directions

Rinse all veggies. In a small bowl combine salmon,mayo,lemon juice. Mix well, leaving small chunks. Cut lettuce into bite size pieces, dice tomatoes,slice olives, cut chives(green 0nion). Combine all veggies except chives in a larger bowl add shredded cheese . Toss . To serve spilt veggies into 2 smaller bowls. Spilt salmon place on top of veggies. this is a great salad for 2.

    This is another recipe that meets all the standards we need for healthy eating. With a couple of good grained crackers, its good for a complete lunch, or add a bit more lettuce for a complete dinner. Its a keeper! - 3/27/07
