Introduction

A new twist on an old Southwestern favorite! A new twist on an old Southwestern favorite!
Number of Servings: 6

Ingredients

    3 boneless, skinless chicken breasts (6 oz each), cut into strips
    1 cup sliced green pepper
    1 cup sliced sweet red pepper
    1 cup sliced yellow pepper
    1 medium yellow onion, sliced
    Fajita seasoning blend, to taste
    1 1/2 tbsp olive oil, divided
    3 whole-wheat pitas, halved
    1/4 cup mexican or taco cheese blend
    6 tablespoons of your favorite salsa

Directions

In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Sprinkle fajita seasoning mix over chicken pieces, coating well. Place chicken in hot skillet, turning occasionally, for about 7 minutes or until cooked through and chicken is no longer pink.

Remove chicken from skillet, keep warm. Add remaining 1/2 tbsp olive oil to skillet. Add in peppers and onions, sauteing for 5 minutes or until peppers are tender and onion is translucent.

Return chicken to pan, heat through. Serve about 3/4 cup chicken and peppers in each pita half, topping with 1 tablespoon salsa and a sprinkling of cheese.

Makes 6 servings.

    This was good, the fat grams are great. All my kids ate it they didn't eat the veggies but ate everything else. - 4/16/07
